5 cups oatmeal flour (make your own in a food processor)
1 ½ cups whole-wheat flour
1 cup cornmeal
1/3 cup sugar
2 tablespoons plus 2 teaspoons baking powder
2 teaspoons salt
1 tablespoon cinnamon
1 teaspoon nutmeg
Mix ingredients together in a bowl. Transfer the mixture into an airtight container.
To Prepare Pancakes:
Combine 1 ½ cups pancake mix, 2eggs, 1 to 1 ½ cups milk, and 1 teaspoon vanilla. Mix well. Melt 1-tablespoon butter or oil in a large frying pan over medium heat. Cook pancakes for 2 to 3 minutes on each side. Enjoy with butter and/or syrup.
