Eco Tutorial: Coconut Brown Rice with Raisins and Cinnamon

My 3 year old son loves to eat this for a healthy morning snack or lunch.
Coconut Brown Rice with Raisins and Cinnamon

Ingredients:
1 cup brown rice
1 can coconut milk
little less than 1 cup water
3/4 cup organic raisins
cinnamon
1 pinch of salt

– combine ingredients (besides cinnamon)in a pot
– bring to a boil on high heat and let boil rapidly uncovered, until the level of the water is nearly at the level of the rice
– turn down to the lowest heat setting and cover pot tightly, cook for 1 to 2 hours
– serve sprinkled with cinnamon and enjoy!
