Nutty fruit snack bars
prep time: 20 minutes
These snack bars can be made with lots of different ingredients. The key is getting the right consistency so they don’t turn out too sticky or too crumbly.
Here is my favorite version:
22 pitted organic dates
½ cup organic raisins
1 cup organic whole almonds
½ to 1 tsp. cinnamon (to taste)
1 tsp. unsweetened cocoa powder
chili powder to taste
I just toss everything into the food processor and grind it up. I only added about a ¼ tsp. chili powder but that was enough to give it a little bite without making them too spicy for my 4 year old daughter.
Mold them into bars and store them in a sealed container, layering them with recycled, unbleached wax or parchment paper. Or wrap individually with parchment paper. I originally just rolled them in to logs because that was faster but as you can imagine, they don’t look very appetizing that way!
Another variation I’ve made was using pitted dates, pecans and candied ginger (sorry, I didn’t write down the measurements for that one). After checking out the LÃ„RABAR website, I’ll be making some with dates, peanuts and unsweetened cherries!
These are wonderfully healthy and less expensive than buying the store-bought varieties (as well as better for the environment because there is no plastic wrapper to add to the landfill).
