Everyone adopted all of the recommended eco resolutions from last week, right?Â Â Well, I hope some of you are doing some of them, anyway.
Here’s a soup recipe to help with eating less meat.
This can be vegan, vegetarian or a meat stretcher, depending on your desires.
Black Bean Soup
1Â large onion, choppedÂ Â Â Â Â Â Â Â Â Â Â Â Â Â Â Â Â Â Â Â Â Â Â Â Â Â Â Â Â Â Â Â Â Â
2Â c canned black beans, with juiceÂ
1/2 c.Â dried black beans:Â soak themÂ overnight, then rinse.Â In clean water, bring to a boil and boil for 3-5 hours, depending on how soft you like them.
28 oz can diced tomatoes
2 tsp Cajun SpiceÂ Â Â Â Â
If you don’t have this, use 1/4 tsp. each cayenne powder, black pepper, ground cumin and salt
3/4 lb bulk Italian sausage or soy meat substitute
Brown sausage and set aside. In same pan, cook onions until soft, but not brown.
In large pot, combine, sausage, onion, tomatoes and spices.Â Simmer for about 1 hour.
Serve topped with raw onions and sour cream.Â
I like to also serve garlic bread, but I like to serve garlic bread whenever I can.Â Â Mine has fiber as well as all the health benefits of fresh garlic.
1 loaf multigrain or whole wheat Italian style bread, sliced thickly
3 Tbsp butter
3 Tbsp Olive Oil
3 cloves fresh garlic, minced
Melt butter, add oil and chopped garlic.Â Spoon or brush oil mixture onto cut sides of bread.Â Bake in 400 degree oven until hot.
