{Eco-Tutorial} Fudge Brownies

Fudgy brownies; delicious delights I never thought I’d be able to thoroughly enjoy again. With a gluten free diet, or any diet for that matter, treats are hard to come by, but yummy treats are even harder to find. These brownies are so good I had 3 right out of the oven as you can see in my photo above! And they’re so easy.

Ingredients:

  • 1/2 cup cocoa powder
  • 1/2 cup chocolate chips (I used semi-sweet)
  • 1/2 cup brown rice flour
  • 1 cup water
  • 1/3 cup oil (whatever light oil you like to use will work fine; think vegetable oil consistency)
  • 3/4 cup sugar
  • 1/8 cup white rice flour
  • 1/4 cup applesauce
  • 1 tsp. vanilla extract
  • 1/8 tsp. baking powder
  • pinch of salt

Preparation:

Mix all dry ingredients together including chocolate chips. Slowly mix in wet ingredients stirring well to get lumps out. Taste the batter; yes, taste the batter. Without eggs, you can taste the batter and see if you need to add anything more to your liking. The way they taste before they go in the oven will be how they taste when they’re done. Preheat oven to 350 degrees and put the brownie batter into a GREASED square baking pan (I used the same oil in my batter to grease the pan). Bake for 35 minutes checking every so often. When they’re done use a toothpick to make sure there’s no sticking in the middle of the brownies.

When they’re warm, the chocolate chips are melted and they’re delicious with vanilla ice cream. When they cool, the chocolate chips harden and are like little bits of bliss in the brownies. They’re a little dense, but so good!

 

These are a great treat to put out at the holidays and no one will know they’re gluten free, dairy free, egg free, corn free, or everything free! Now instead of envying my family stuffing their faces with lovely smelling cakes and pies and anything else, I have my very own piece of heaven to enjoy and they’re all mine!     • Thank you! I have a feeling I have to make more soon myself, I’m down to 3 brownies and I’ve been eating 2 per day! They’re really good if you put them in the microwave for 10 seconds so they get warm and gooey again like they were right out of the oven. mmmmm!
