{Food & Gardening} Creamy Rice

Being on a special diet doesn’t mean you have to cut out some old favorites. I’m using dairy free and gluten free items to make a creamy rice side dish almost like a risotto or a white macaroni and cheese. You can add whatever you like to it like meats or veggies since it’s a nice hearty base.

Ingredients

  • 2 cups unsweetened coconut milk
  • 1 cup dry white rice
  • salt
  • black pepper
  • garlic powder
  • other favorite seasonings

Preparation

Fill medium saucepan with 2 cups of coconut milk and put on medium-high heat until you see small bubbles, but no boiling. Pour in 1 cup of dry white rice and cover for 20 minutes on low. DO NOT TAKE OFF THE COVER. You need to let the steam cook the rice until it has absorbed all of the liquid. A way to check if all of the liquid has been absorbed is to tilt the saucepan to the side and see if there’s any loose liquid in there. I know it’s tempting to open the cover but wait until the liquid is gone to open and fluff the cooked rice. Add salt, pepper, and garlic powder to taste or add in your own favorite spices and enjoy a thick creamy rice side with your dinner.

You can even add in peas or corn and make a mac and cheese like side dish (I always had my mac and cheese with peas, yum!) What was one of your favorite items you can no longer eat, I’m taking suggestions for new recipes! :)

  1. I love rice cooked in coconut milk! I miss corn bread but that would be pretty tough to make without the corn.

  2. I really miss pizza with a thick, chewey crust! I have not yet conquered the gluten free crust…

    • Kathy I must say I completely agree with you. I’ve been thinking about trying it out, so maybe that will be my next post??? My other favorite was those soft pretzels with butter in the mall. What I wouldn’t give to be able to eat just one more of those!
